ABOUT THE CHAMOY & TAJIN KIT
Chamoy Ingredients: Dried Apricot, Mango, Water, Chiles Guajillo, Morita, Ancho, Lime Juice, Orange Juice, Grapefruit Juice, Tajín, Salt, Sugar.
Tajín Ingredients: Chile Guajillo, Morita, Pasilla, Dehydrated Lime, Salt, Sugar.
From Chef Adrian: I mostly use chamoy on fresh fruit when I want something sweet, tangy, and spicy. That’s the classic move. But I’ve also used it as a glaze on ribs, and honestly it works really well.
Not sure which came first. But tajín is basically chamoy in a dried form, it pairs well as a seasoning for fruit and other applications where sweet heat is needed. I love putting it on corn in a cup!

Tea Ingredients: Hibiscus, Lapsang Souchong, Cinnamon, Star Annis, Demerera.
Garnish Ingredients: Orange & Lemon.
Directions: Place pouch in French Press or split into two tea pouches. Heat water to 212 degrees F - steep press/pouch for 10 minutes. Strain. Serve. Add sugar to taste.

ABOUT THE FRUIT PÂTE
Ingredients: Sugar, Glucose, Pectin, Citric Acid, Local Strawberries, Preserved Orange, Pineapple.
From Chef Priscilla: Pâte de fruit is french for fruit paste, these are tossed in a citric acid sugar making them a little sour.
At Barbacana, we source our produce from local farms as much as possible and try to reduce food waste by using products to their full potential. The strawberries are locally sourced from farms around Houston, the Preserved Orange is made from the remains of juiced oranges( peels, pith) and preserved in sugar, showing some of the methods we use in the restaurant every day.
